Food science program, pioneer to be celebrated at gala

The 30
^th
anniversary of
Chapman University’s Food Science Program
and the 90
^th
birthday of one of its greatest champions and beloved faculty, Walter Clark, Ph.D., will be celebrated at a gala dinner at 6:30 p.m. Saturday, Oct. 16 in Argyros Forum.

“He and his wife were great supporters of students and started a fund to support students going to national meetings and student-related activities. They gave an endowment of $50,000 and asked others to contribute. It’s still being used,” says Fred Caporaso, Ph.D., professor,

Dr. Clark was working at Hunt Wesson when he and other food industry scientists approached Chapman about developing a food science program to meet the needs of Southern California manufacturers.

“He’s always been one of our external champions for the program since its inception and still is even today. Walt’s known internationally. He’s a food science icon and he wears his Chapman label proudly,” Dr. Caporaso says.
