Sodexo plans "green" menu for April climate change conference

The “Beyond Copenhagen” International Climate Change Conference at Chapman University on April 21-23 will feature a sustainable “green” menu, courtesy of Sodexo, which provides Chapman’s restaurant and dining services.   And proving you can go green and still be very. very tasty – check out this sample menu:

Sample Menu:

  • Organic baby spinach with radicchio, toasted pecans, marinated sweet red onions and shaved bleu cheese
  • Free-Range Chicken Piccata with saffron-infused piccata sauce, organic caper berries, quinoa pilaf and organic vegetable ribbons
  • Organic Blackberry croustade with whole berry coulis and Chantilly cream
